Italian extra virgin olive oil is well known throughout the world for its qualities, and Fattoria di Petrognano produces it exclusively with the fruit of the olive trees on its land, trees that grow at 300 m above sea level. The olives are harvested between November and December and are brought to the press the same day so that they are immediately cold pressed, according to strict production rules. All of these steps take place exclusively on Tuscan soil. The species of olive trees present in Petrognano include Frantoio, Moraiolo and Leccino, for a total of around 2,000 plants ranging in age from 15 to 110 years old.
